When going between 1 and 2 and further gears, I noticed that he engages the clutch fairly slowly and adds gas. What you're doing now is a procedurally-correct single-clutched downshift. If you're finding more resistance to moving the shifter than you want, what you need is a double-clutched downshift. Yikes, 5000RPM is an awful lot of noise and drama for barely moving! You'll improve with practice. It's no worse than some of the shenanigans I've pulled on my driveway/ramps...lower RPM, but heavy clutch slipping with heavy throttle pushing a lot of torque through.
