Except then you put undue stress on the torque converter don't you? I have heard that when you apply the foot brake in an auto it effectively disengages it or something so it's not fighting the brakes. With a parking brake, this wouldn't happen and the trans might overheat/slip won't it?

No. The foot brake, parking brake, a curb, a hill, the bumper of the car in front of you, a wheel chock, a seized wheel bearing...they all do the same thing to the torque converter. The torque converter does not disengage like a clutch. You may be confusing that with the locking behavior that modern torque converters do when cruising; they unlock long before you stop.
The torque converter takes thousands of times as much abuse when you floor the gas pedal while driving than when you leave it in gear while stopped.
